nasi lemak, but make it bingsu.

every merdeka we ask the same question: what is the most malaysian flavour we could bring to snow ice while keeping it genuinely good to eat? this year the answer was the breakfast the whole country agrees on.

the build.

nasi lemak has a structure: coconut rice in the centre, everything else around it. so the "rice" is a mound of coconut shaved ice. on top sits a "sunny side up": a disc of coconut ice-cream with a mango mochi yolk that gives when you press it. around the plate, the sides follow the same logic: crunchy almond flakes for the roasted peanuts, savoury ikan bilis for the salt, and a raspberry jam in place of sambal, sweet and sharp. it is served on a banana leaf, as it should be.

how to eat it.

the anchovies are the element most guests hesitate over. taken with the ice and the jam in the same spoonful, the salt is what brings out the coconut, on the same principle as salted caramel.
